I confess - I watched more Nigella on YouTube last night since the next episode isn't on tv yet.  This time her late night hangover snack sounded rough! A black bean & chorizo spicy soup. Sounds delightful for right now but in the middle of the night I think that would make me ill. ; )

Will get him to tell me the receipe and pass it on to you.. I think they were meant to be cranberry and pistacio but I dont like cranberry so he swapped them for glace cherries which I love :) I sampled some more last night .. warm with fresh cream - heaven !!

 Gourmet Cupcake Plate

Put a twist on the traditional Christmas cookie plate by offering your friends these gourmet cakes. And don't worry about spending hours in the kitchen—they're all a snap to make!

Chocolate Cream
Chocolate cream cupcakes are simple to prepare, yet elegant and full of rich chocolate flavors.
1 box chocolate cake mix
3 eggs
1 cup sour cream
2 cups heavy whipping cream
1/4 cup powdered sugar
1/2 cup grated chocolate, for garnish
Mix together cake mix, eggs, and sour cream until smooth.

Bake at 350 degrees for 15-18 minutes or until cake springs back when lightly touched.

Cool completely on a wire rack. When cooled, cut the top off and pull out some of the cake filling, leaving a solid wall of cake to support the filling. Whip the cream until stiff peaks form and add powdered sugar. Add whipped cream by the spoonful to the holes of all cupcakes and top with cupcake lid. Frost with desired frosting and garnish with grated chocolate.

Frosting suggestion: Chocolate Ganache
1 cup heavy whipping cream
12 ounces semi-sweet chocolate chunks or chips
Heat cream in a saucepan until it comes to a boil. Remove from heat and pour over chocolate in a mixing bowl. Stir to mix together. You can pout it over your cakes warm, or allow to cool slightly and be spread like frosting.

Chocolate Peanut Butter Cup
My neighbor said these cupcakes are sinful. But believe me, they are worth every bite.
1 box chocolate cake mix

3 eggs

1 cup milk

1 bag chocolate peanut butter cups
Mix together cake mix, eggs, and milk. Pour 2 tablespoons batter into paper liners and place a peanut butter cup on top. Fill paper liners 3/4 full.

Bake at 350 degrees for 15-18 minutes or until the cake springs back when lightly touched. Remove from oven and allow to cool on a wire rack. When completely cooled, frost.

I've mentioned this website before (and will probably mention it lots in the future!) but want to remind you all about it in case you or your kids are on a special diet.

Before I found this website I had a really hard time making sweet treats for myself. It was a lifesaver! I enjoyed reading about the woman who does the website, and every recipe I've tried as made me feel that I'm eating "the real thing".

Appetizers for a holiday party

(These days I don't have to be as strict with my eating though - this will be my first Christmas in 6 years where I can really just eat what I want and don't have to worry about my body freaking out...yay!)

 Breakfast Apple Cake

I still have apples... I had these high hopes of doing one last canning hoorah... but alas, it didn't happen... Big surprise... I'm working five days and four nights a week and managing three kids alone LOL Last night I made my yummy apple bread again. I did some to go with our hashbrowns and eggs for dinner and some to freeze. We finished up what was left in our freezer the other day. I also made an apple cake so we'd have breakfast all done in the morning. It came out really yummy and was perfect warmed up with a glass of milk!

Breakfast Apple Cake

1/2 c. milk
1 tsp lemon juice
1/4 c. butter
1 egg
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 c. sugar
1 1/2 c. flour
1 c. diced apples (1 lg apple)

Mix all ingredients together. Pour into a square baking pan sprayed with cooking spray. Sprinkle batter with cinnamon & sugar. Bake at 350 for 30 minutes or until a toothpick inserted in comes out clean.

I planned my Christmas meal last night and made a list of food I need to buy... Really excited about this turkey potpie with cheddar biscuit crust! It's an American recipe & so we're referring to biscuit in the fluffy scone-ish type of way. Click here to see what I mean: fluffy biscuits on google images.

Aside from that, some salads, some baked sweet potato and some roasted brussel sprouts. For dessert I'm taking the easy way out and getting some of the homemade Portuguese custard tarts that I had for Thanksgiving. They were too delicious...

I bought the most heavenly mince pies the other day.. Morrisons the best deep filled mince pies.. these will definately be my Christmas day pudding :)
